Hello! I found this two kind of sentences
- sushi yori sashimi ga oishii desu
- sashimi wa sushi yori oishii desu
are this sentences both correct?
if yes, which are the differences in the meaning?

I(Japanese native) understand both sentences and correct. No difference in meaning.
I would say it sound more natural if you say
"sushi yori sashimi ga suki desu"
"sashimi wa sushi yori oishii to omoimasu"

Yes, both are correct.
If there are the differences, it's about what is talking/emphasized.
- How about sushi?
- sushi yori sashimi ga oishii desu
- Oh, do you love sashimi?
- sashimi wa sushi yori oishii desu
"komomi"(my taste) or something may be fit as natural Japanese than "oishii"(tasty) though, by the way.
