Hi any good chef from Japan can let me know how to tenderise chicken ( which melts in mouth) , I want to learn i can even visit japan if anyone is willing to help me out really urgent kindly help

Its more in the quality of the chicken not how to tenderize but if you must tenderise chicken brining in a salt sugar water solution is possible or try 7UP lemonade honest it works its the enzines in the lemonade that softens the chicken works fantastic on calamari
