I have seen the word "family" written two different ways. One is with only one symbol, the other is with two symbols. What is the difference between the two? Thank you!

Can you show which ones those are? The most "common" (or usual) way to write "family" would be 家族, with two kanji characters.

Maybe it's 家(ie) that means house, home and family.

That is true, 家 by itself can mean the physical house, home, or family. But when it is used in the sense of "family," it is often strung together with the family's name to say, for example, "the Suzuki family," or "the Suzuki household." 鈴木家.

I think in some sentences like 家のため or 家の用事, I can use 家 as "my family". Anyway I'm unsure what did OP see, though.
