You don't have to add "onegaishimasu" if that's too difficult for you.

But I strongly recommend you to not just say "back", because your back is quite a vast area. Instead, use your hand to point the part you're referring to. And if what you are trying to say is to have that part expecially trimmed, you can say "toku ni koko o soro-ete (kudasai)".

By the way, according to my experience, in any country, the way a hairdresser trims your hair greatly differs depending on the hairdresser. Enjoy your adventure and remember that your hair will always grow again. It would help if you bring along a photo of yourself with your hair ideally trimmed.
