Hi, I will be on a visit to a friend living in Miyakonojo. There were options of either limited express (80 mins) or local train (90-100 mins) there.
Just curious about, what trains are used in local transport there? Considering the price is nearly double for limited express but just 10-20 minutes shorter ride, I might consider the local train.

As you wrote, the difference of the fare cannot be justified by the difference in traveling time, I think. I searched on the net but cannot find official page showing the car type used for the local train. I guess it might be the former limited express car or commuter type car with the long seat.
Or you can buy Ni-Mai-Kippu, 3900 yen including the base fare for two trip (within one month) and two "non-resereved seat fare for the limited express". If you buy this ticket, the price difference is 470 yen for one way. You can buy this ticket at Kagoshima-chuo station on the day of travel.

Basically, the limited express is more comfortable and less crowded, and also allows seat reservations if you want to be sure to have a seat and sit next to your travel companions. You can view it as a sort of "business class" train...

To add a bit more to the info above. The limited express services use 783 and 787 series trains. These are a 2+2 seat configuration. So 2 seats, the middle walkway and 2 more seats.
The locals normally are 815 and 817 series trains. These have the normal longitude seating. eg long bench seats between door with your back to the window.
You can google these trains to find pictures of the interiors.

I remember seeing, some years ago, a japanese page with line up of trains for different areas. But it might be gone since I cannot find it anymore. In Hokkaido I rode the diesel unit trains KiHa 40 something https://en.wikipedia.org/wiki/KiHa_40_series#JR_KyushuApparently sold to JR Kyushu as well but maybe that is not used on the electrified rail way sections (diesel duh...). There are some so called Joyful trains however but unless you are transfering along the way (the Hayato no Kaze from Kagoshima using Kiha 47 DMU heads north after Hayato station).
