I am visiting Gujo Hachiman from Nagoya in July, and unsure if staying 1 night would suffice.
Could anyone please advise .

We visited Gujo Hachiman with one stay there and felt we'd seen it pretty well; we did arrive early and dropped off our luggage at the ryokan to immediately start seeing the sights. It is all about the flowing water there, very wonderful, and a little about the plastic food models you see in restaurants.
