Hi,
I have Engineer/Specialist in Humanities/Int'l Services visa self sponsored.
1) I would like to know in case I stop working for my company and start looking for other jobs or courses, how long can I stay in Japan without working?
2) Is it possible to change my visa to stay longer without working?
3) In case I decide to study in Japan, can I change my visa from Engineer/Specialist in Humanities/Int'l Services to student? How does it work?

1) Officially, you need to inform immigration of a change in your job status within 2 weeks of the change, and your company will do likewise. They have the right, at that point, to revoke your resident status and demand you leave Japan. In reality, especially if you let them know you're looking for a job or have one lined up already, you probably have until the end of whenever your residence card says... there should be an expiration date listed on it.

2) No, because the point of your status is that you are working. The idea is, if you're no longer working, you should go back to your home country. Now, if you are legitimately job searching and can prove it, or are waiting for enrollment at a school and again can prove it, they MAY give some sort of extension at their discretion, but it's best not to count on it. This might best be asked directly to immigration.

3) Yes, you apply for a chance in residence status at immigration. There are some forms to fill out, and you'd bring proof from your school of enrollment. Some schools may also handle that sort of thing for you.
