Have you tried searching on Google?
There is a popular YouTube channel called "Cooking with Dog" which features some Japanese recipes. I don't know if they have the specific ones you are looking for, though.

I'm Japanese, but the Japanese don't typically make Banana Fries. Also, I don't exactly understand what you mean by "egg salad", but if you're talking about the American kind, which a lot of Japanese might make too, you just mush boiled eggs, mayo, herbs and spices. I can't really think of a "Japanese egg salad".

People don't typically heat bananas in Japan. Maybe you just happened to encounter someone with a different taste. But I do commonly see banana chips being sold in Japan, and I've noticed some American people being especially fond of it, like it was something very unique. I have no idea how they're handmade though.

Banana chips and egg salad are not Japanese dishes. They have been imported from other cuisines.
