To work as a nutritionist in Japan, you need to pass the national examination, which would be in the Japanese language. If you attend a course in nutritional studies at an accredited college in Japan in Japanese, you would be exempt from that exam (graduation from such courses is considered as successfully completed the exam). I have not been able to find any more information such as the Ministry recognizing non-Japanese college as equivalent.
