Hi
Was watching the movie Makioka Sisters the other day and was really inspired by the old style buildings with dark colored wood and sliding doors they were living in.

I plan to visit Kinosaki onsen and Takayama when in Japan next time. Would be nice to stay in such an old style building for a night.

What kind of accommodation shpuld I be looking for? Minshuku? Ryokan?

Look for an old building.
Some ryokan are modern/new buildings - sometimes with some old style fittings, other times not. Certainly one of the cheap places I have used in Takayama was an old style with screens etc, and a toilet on a different floor, but it did have its own charm and the owner brought me coffee in the morning which was nice.
Even some old buildings are retrofitted so check photos of different places. Another ryokan I stayed at two years ago was a few hundred years old, but everything was new/modern in the rooms.
