7 Day Japan Rail pass viable for our trip?

We will be in Japan from April 13th to April 25th. We plan to activate the 7 day pass on the 15th to take the shinkansen to Kyoto/Osaka and back to Numazu on the 19th and back to Tokyo again on the 20th. We pretty much have 5 free days to explore Tokyo or explore elsewhere. Will 7 days be enough and then just use IC Cards the rest of the way through?
Also if we activate the JR Pass on the 15th, will it still be usable on the 22nd or is 21st the last day to use it? Thanks.

Yes, the 7-day JR Pass is the most you should get.
If you activate it on the 15th, the last day will be 21st.

Seven calendar days. Last use is boarding a train before midnight on the 7th day. So 15th to 21st inclusive.
