Help needed with our Hokkiado Trip

Both me and my wife are keen photographers, this will be our fifth trip to Japan but the first time to Hokkiado. We really enjoy driving around the countryside and stopping off to take pictures as and when we see them, we also like stopping off in small towns and explore them on foot. Below is what we have planned up until now;
South Trip
8th May Sapporo ANA Crown Plaza
9th May Lake Toya Toya-onsen Hotel Hanabi
10th May Hakodate Four Points by Sheriton
11th May Hakodate Four Points by Sheriton
12th May Esashi Road Trip
12th May Suttsu Niseko Northern Resort Annupuri
North Trip
13th May Sapporo ANA Crown Plaza
14th May Biei & Furano Hotel Lavenir

My thinking is that I am really not sure if we want to go all the way up north to Wakkanai so we won't book the last 3 nights incase when we are on our travels we might want to go back to somewhere that we have already been to but didn't have enough time to explore.
Below are what I have found so far as points of interest with Photography in mind;

Hakodate Mount Hakodate, Hakodate orthodox Church, Hakodate Ward
Hakodate Day trip to Matsumae Castle
Esashi Drive up the coast line looking for photo opportunities
Suttsu Drive up the coast line looking for photo opportunities

Please please feel free to give us as many places that you might have been to that you think we should add to our list, not only for photography but places to eat out at etc etc
