I've noticed on the website for the Kansai Thru Pass that you can purchase it online. If you choose this option, will they mail it to you or do you have to pick it up at one of the locations in Kansai?

Per their web page you need to pick it up at :

[Exchange counter] Nankai Kansai-Airport Station Ticket Office
*EXCHANGEABLE ONLY AT NANKAI KANSAI-AIRPORT STATION TICKET OFFICE, NOT AT ANY OTHER STATIONS OR OFFICES
