Can i exchange the JR voucher to a pass for a future date ? Or i have to get to the JR office only at the same day that i want to exchange the voucher to a JR pass ?

You can exchange the voucher for the pass for an effective date up to 30 days from the date you exchange it. For example, you can exchange it on the 10th of September and have the effective start date to be the 21st of September. You can also start reserving seats for the 21st on the 10th as well.
