Miso making class in english

Hi, my wife an me will visit Japan in 2020 Can anyone tell me where I can find a traditional Miso making class, taught in English and or other fermentation methods also, (Tempeh, Amazake, Natto)? We are interested in the cultures and the traditional utensils. Thank you in advance. Rgds

This old thread looks helpful. It seems as though Miso is mainly made seasonally (winter due to cold and dry air conditions) so to limit bacteria numbers. Others will know way more than I do
