My Japanese language learning sites seem to differ and I don't know which Kanji to use for earth.

They differ because the English word "earth" has multiple meanings. Do you mean "earth" like the planet, or "earth" like dirt?

As in 'dirt'. I'm trying to figure out the correct Element Kanji and I've heard both 'tsuchi' and 'chikyu' and not sure which is correct.

If you are learning Japanese “imiwa” is a great app.
Chikyu 地球 ちきゅう the earth, the glovbe
Tsuchi 地 or 土 つち earth, soil

For the element earth (like in the series of earth, wind, fire, water) the kanji you want is 土
