I'll visit Kakunodate to see Cherry Blossom on 1st May . So at that time, may I still see Cherry Blossom in Kakunodate?

No, May 1 will be too late. The 2023 blossoms were half a month earlier than in the average year. They are currently in full bloom and will have fallen in a week from now. The only place to still see the flowers on May 1 may be eastern and northern Hokkaido, but note that they will be a slightly different variety than elsewhere (Ezoyamazakura, aka Oyamazakura).

I was there on 4/14 and it was peak. There's been some windy days forecast so unlikely by your dates.
