Itinerary Check

This is the outline I have so far, its very much a work in progress, any advice would be welcomed, I do plan to buy a 21 day JR pass. Any recommendations for the last few days would be great as well. I plan to take the shinkansen to Hakodate, and then to Sapporo, (for the views) but fly back from Sapporo to Tokyo to save time.
I am interested in doing anything really, I'm a huge foodie, and also, can anyone recommend any segway tours in japan? is that a thing? I haven't had much luck finding them really. Thank you for your time.

11/3 Friday - Arrive

Arrive in Haneda at 5/6 am,
Drop luggage off at hotel - confirmed they hold luggage
