Hi,
If I buy cameras in a duty-free shop in Tokyo, can I actually use them while I am in Japan or only when I leave the country?
Can I trade-in my old camera in a duty-free shop in Akihabara?

There's no reason why you can't use them in Japan. As long as you are taking them out of Japan with you when you leave.

When I purchase something duty free (outside the airport) I get a piece of paper stamped into my passport, and when you leave Japan you present your passport with the piece of paper along with the item, and the Customs inspector checks and removes the paper from your passport.

I'm not sure if you can trade in an old camera (depends on the store I guess) .

Depending on what you buy and where, the items are no different, other then you get a slight tax break.
