We are a family of7 and will be in Osaka in Jan 08. How often are the trains from Osaka or Kyoto to Tokyo,cost and do we need to book in advance?

There are about 4-6 nozomi trains and 2 hikari trains per hour.

No. But if you are 7 and want to sit together, it is recommended.

If you mean the shinkansen, bullet train, they run every 6-15 minutes throughout the day. You don't need to book in advance unless you're traveling in a very busy season. Just show up at a station and book the next available train. The shinkansen station in Osaka is called Shinosaka.
