Items in Ramen dishes 2008/1/22 14:06
I am looking to become a chef and I would like to become familiar with Japanese/Asian style cooking.

What are some common items that are found in a simple or classic japanese ramen noodle dish?

Some things I have seen are the types of seaweed and those things like look like dough stars with the red swirl in the middle.

What are these and how can I make them?

Any information is greatly appreciated!

Thank-You.

the dough stars you're talking about are called Naruto. It's pressed fish cake. I don't know how to make it, but you can buy them easily in Japan and an Asian food market.

Other than Nori, seaweed, you will find Chashuu (which is the flat, round pork meat), bamboo shoots, green onions, and half of a hard-boiled egg cut horizontally. Some ramens might have kim-chee, but usually these are special dishes. Other times you might find bean sprouts.
