Am interested to purchase a guitar from Japan. Will be in tokyo from 12 to 15 dec. . Am wondering if the shops at'Ochanomizu city' open on Sunday.

Stores, especially big ones and also many specialty ones are open on weekends because Japan is not a Christian country therefore doesn't have a "closed on Sunday as we go to Church" culture. Of course small one-of-a-kind stores have their own idiosyncratic schedules so you better be flexible.

In general terms, the biggest shopping day of the week is Sunday.
The least shops would be a Monday, as some shops take a rest after the weekend.
