We want to go nozawa by bullet train from Tokyo we will be staying a week at nozawa to ski so no side travel.
Should we buy ticket before leaving australia and which is best ticket to buy

Just buy a regular shinkansen ticket from Tokyo to Nagano and then take the bus to Nozawa Onsen, as described here:

You can travel cheaper (but considerably slower) by taking a highway bus from Toyko to Nagano.
