Is Karin a Japanese name? If so, what does it mean? Could it have multiple meanings depending on the Kanji? What Kanji would be used to spell Karin?

You can do a search for the different ways to write the name 'karin' in WWJDIC http://www.csse.monash.edu.au/~jwb/cgi-bin/wwwjdic.cgi?...

Type KARIN under Keyword, make sure you select 'Japanese Names (ENAMDICT)' from the Dictionary drop down box and check the 'Search using romanized Japanese' box and press the Search button.

I have come across Karin as a name, usually for a girl with one foreign, one Japanese parent, or Japanese parents who want a modern sounding name. It's not a traditional Japanese name.

The Japanese word for "quince", (a fruit if you are not familiar with it) is karin (‰Ô—œ), so this is a possible meaning.

So far most of the spellings I've seen for Karin were in Hiragana though I found this one : ‰Ô—é which means flower bell. Here's links to other kanji spellings.
