How can you reserve a hut ahead of time?? From what I see they only speak Japanese and the websites are all in Japanese.

I assume that at least some huts have staff with enough English skills to accept a reservation by phone in English. You could also ask somebody in Japan to help you make the phone call (e.g. hotel reception). Unless you climb on a weekend or during the peak of the season (Obon week in mid August), I don't think that the huts usually get booked out. So, you could wait making reservations until arrival in Japan.

Fujisan Hotel at 3400m has English speaking stuff. Another popular one is Toyokan Hut. The rest of them do speak some very basic English. I stayed at Gansomuro last year and I heard one of them talking in very poor English with someone who was trying to stay there.
