切断するという意味なら"cut off"を使うと思います。

まずgut(臓物)ではなくgotです。そして、そこを直さなくても通じはします。ただし、お書きになった訳文を活かしつつ、より正確な英語にすると以下のようになります。

They got their legs and arms cut by broken window glasses, or their heads hit by furnitures falling.

また、日本語の原文に、より忠実な訳にしたい場合は、以下のようになります。
Many of those injured were people who had their arms and legs cut by broken window glasses or had their heads hit by furnitures falling.
