Raw fish 2009/5/16 04:47
Which types of raw fish are edible, e.g. as sushi or sashimi? I do love tuna and salmon, I don't like shellfish - so 'tako to ika to ebi dame desu'.

I'm pretty sure that it's possible to eat most types of fish raw if they're fresh. Obviously some taste better than others but I think they're mostly edible if they're fished from the sea.

BTW, call me stupid, I had no clue squid and octopus were part of the shellfish classification. Wow, I learned something new today!

Most of saltwater fish are eatable as raw fish. Generally it depends on their freshness.
Usually, Tuna (Maguro), bonito (Katsuo) and young yellow fish (Hamachi) are eaten as raw fish. Fresh sea bream (Tai) and flat fish (Hirame, not Karei) are prized. Raw horse mackerel (Aji) and sardine (Iwashi) are delicious if they are fresh enough.
If they are not fresh enough they will grill or be boiled.
Usually salmon (Sake) and mackerel (Saba) need to be heated (or other processing) because they have parasites. (Sometimes salmon's parasites are killed by freezing. A few mackerel have not parasites)

Most of fresh water fish need to be heated because of their parasites.
