How to make maguro-don?

When in Japan I ate several times maguro-don and I love it. I would like to prepare it myself but I do not know how exactly. Sure, the rice with vinegar is no problem, I know it's tuna on top but most tuna is quite red while the tuna on maguro-don is pink and seems mashed. What do I have to do / add to get it that way?
Anyone who can help?
