I am a British citizen and I am hoping to marry my fiancé in Japan early next year. I currently reside in the UK and my fiancé resides in Japan (she is a Japanese citizen). Is a special VISA required to go to Japan for marriage? Is it possible to travel to Japan with a 90 day sightseeing VISA and then simply ‘upgrade’ it to a spousal VISA once the marriage has been completed?

There is not fiance visa for Japan.

Yes, that is exactly what you can do. Search around the forum as there are many other threads that list the steps and paperwork necessary to get married in Japan.
