What is some good associate and bachelor degrees to work in Japan with?
Also please think which would be good for the future.

An associate's degree will not get you a visa, it must be a bachelor's degree. As for which degree, what do you want to do in Japan? The main jobs that non-Japanese do here are usually in the areas of finance, IT, English teaching and translating.
For the first two you usually need work experience outside Japan to be hired here.
I would choose something based more on what you actually want to do with your life- no use studying TESOL if you don't like teaching.
