I have purchased several kitchen knives in Japan. Some were large chefs knives, and no problems in checked luggage.

we also have bought many kitchen knives in Japan, and put them in checked luggage, where we can easily get them if needs be at Customs. We declare them when entering Australia, but have never been asked about them yet. Have fun choosing!

I agree, I always brought knives in my luggage, as I love to eat.
so I brought the medium ceramic knives incase I need to cut something to eat, like fruit or meat or sashimi? =)
and I never find a problem at all.
