Name of dancing flakes on Takoyaki?

Went to a cafe in Kagoshima recently and they added lots of flakes to the top of the Takoyaki. The flakes actually moved, almost danced on top of the takoyaki. Are they just regular Bonito flakes or are they special flakes to dance like that?

Not that I know that particular cafe, but as far as I know, they are regular bonito flakes. They move like that with the heat and steam rising from the takoyaki :)

Yes, it is bonito. You should see them dance on the top of Okonomiyaki when it is still on the cook plate, they go nuts. It's almost a little sad

It was Katsuobushi in Japanese. And green seawoods are Aonori.

Don't try at home even you have the Japanese planer. It is time consuming and frustrating. But freshly planed katsuobushi shavings smell so good. No comparison to packaged. Try katsuo no tataki sashimi(surface seared). It is better than tuna, imo.

Yes! like someone said 'Bonito flakes'. You wanna know why they dance? Because of the heat! hahaha No seriously though! :)
I want some takoyaki now...
