I have been given a couple of uri , うり? They seem to be a kind of vegetable, but how do you cook with them? I'd prefer not to make tsukemono with them. Many thanks!

I think Uri has lots of variations so I am not sure about the Uri you have now, but I guess it might be something in between cucumber and eggplant. Therefore the cooking methods for cucumber and eggplant might be applied.
Shio-momi (used for cucumber)
Thin-slice with a slicer. Add a pinch of salt and squeeze with fingers. Dress with some sauce of your favorite.
Miso-soup (used for eggplant)
Slice at 5-7 mm. Boil in hot water and make it to miso soup.
Baked vegetables
Slice at 5-7 mm, together with tomatoes, potatoes and bake them in the oven.

Then it's fruit. Eat like melon. in some parts of Japan, some melons are called uri. Don't put yours in miso soup. Make it ripe and eat straight.
