hi hajimemashite i love japanese cuisine n really excited to try it when i visit japan next time, but i have a doubt for its ingredients as i am a muslim. how about the sauce for tendon n the soup for udon or soba? is it mixed with mirin or meat broth (for the soup)? really appreciate your help, thank you before

how about the sauce for tendon n the soup for udon or soba? They made from soybeans, rices, sugar and fishes or seaweed, you know.
In general, traditional Japanese foods are made without meat. Because by Buddhism, Japanese basically dislike eating meat for a long time till Westerners Expedition (1849).

thank you for your answer :) i ate at Tendon Tenya n Hanamaru udon in my previous visit, as i informed that tempura n udon are halal food, n the soup or sauce made from shoyu n dashi. but in wikipedia, it mentioned that sometimes they add mirin or sake to the sauce n soup, especially for Kanto style udon. so im a bit confused
