There is the salad sushi in Shushi Nova Aoyama.

One of my friends who used to live in Japan has written a Japanese Vegan website in English with some quite good information.

As he was a devout vegan and lived in Japan, he's also got hints on how to get food on the go and such.

On non-fish sushi, it's possible but you'll be highly limited to your choice at most restaurants. It's basically like going to a steak house and asking for a vegetarian burger.

One possibility which others may know is there are some fusion restaurants which are pushing the boundaries of what is considered sushi through experimentation. Some friends mentioned a place in Tokyo like this but I don't remember the name. Others may know...
