Trip to Echigo-Yuzawa

I'm planning a trip to Echigo-Yuzawa from Tokyo sometime from Oct 19-25.

Besides Sake tasting at the station, I'll like your advice on what else I can do in Echigo-Yuzawa. I like old villages, waterfalls and mountains.
