Tsukiji Flash froze tuna anisakis 2023/8/5 01:40

Hello

I would like to enjoy some tuna sushi in the Tsukiji outer market but I am concerned about anisakis.
I am aware that sushi chefs are experts on this, but anyway, is the tuna used in sushi preparations flash frozen so that we can confidently eat it without worrying about anisakis?

I have read something pointing in that direction, that tuna in Tsukiji (or Toyosu) is frozen instead of fresh, isn't it?

Fresh (non-frozen) tuna shares only 10% of the market. So, at places like Tsukiji where fish come from around the world, most tuna served are likely to be frozen.

But all you have to do is to just ask for frozen tuna. The fresh ones are the expensive and more tasty ones, by the way.
