Hi all,

I'm planning a trip to Japan this year (it will be my third time). I enjoy Ramen noodle in Japan. But I would enjoy it even more if the flavor is a bit less salty. Would it be offensive if I ask the chef to make my Ramen soup less salty?

Certain ramen places let you customize your own ramen. You can choose the "strength" of your soup.

You can ask to dilute the soup. I think majority of Ramen chef accept your request friendly(but some are not so happy).
Ask at the Ramen restaurant that;
"Soup wo sukoshi usumete kudasai"
(Please dilute the soup a bit)
They will add more stock soup then.

You can also order if you want to eat a bit harder noodle or softer noodle.
"Men wa katame de onegaishimasu"
(Please cook noodle a bit harder)
"Men wa yawarakame de onegaishimasu"
(Please cook noodle a bit softer)
