Hi all,
I'm planning a trip to Japan this year (it will be my third time). I enjoy Ramen noodle in Japan. But I would enjoy it even more if the flavor is a bit less salty. Would it be offensive if I ask the chef to make my Ramen soup less salty?

You can ask to dilute the soup. I think majority of Ramen chef accept your request friendly(but some are not so happy). Ask at the Ramen restaurant that; "Soup wo sukoshi usumete kudasai" (Please dilute the soup a bit) They will add more stock soup then.
You can also order if you want to eat a bit harder noodle or softer noodle. "Men wa katame de onegaishimasu" (Please cook noodle a bit harder) "Men wa yawarakame de onegaishimasu" (Please cook noodle a bit softer)
