Does anyone know how long you have from when you buy a 7 DAY JR RAIL PASS to when you have to activate it ?
I am thinking of buying one soon but will not be going to Japan until August

Three months. For example, if the exchange order was issued on April 16, you must exchange it on or before July 15.

I think that the voucher needs to be exchanged within 3 months of issue.
As the price of the JR Rail Pass is in yen, what I do myself is before I buy the voucher, I keep an eye at the exchange rate of the Japanese yen; if I think the rate will go up, I buy early, if I think the rate will go down, I buy late.
