Shirakawa and Chubu travel

I am lucky enough to have two spare weeks in Japan in December and January. My rough plan was to use Willer Bus Pass to travel around Tokyo, Niigata, Gifu and perhaps Kobe. I am starting and finishing in Hiroshima.
I was keen to see Shirakawa, but looks like I am too late to get accomodation or even a tour to see the illumination. Is it worth seeing the town during the day?
Can anyone suggest a good destination to stay along this route? I would love a night or two in the snow, no need for skiiing. Any ryokan suggestions accessible by public transport?
