I will be using a JR pass (7days) to book a nobinobi seat on that Day 7 (last day) of my JR Pass. Sunrise Seto / Izumo (back to Tokyo) Okayama 22:23 Himeji 23:35 Osaka 0:34
I will be located in Osaka on Day 7 of my JR pass. i will not be unable to book the Osaka 0:34AM night train back to tokyo as my JR pass will expire after day 7 midnight.
Option A : 1. Book night train ticket from Himeji 23:35 to Tokyo 2. Get into Osaka train station to board the nighttrain before 12am on Day 7 of JR pass. 3. Wait and Board the night train at 0:34am when it stop at osaka using the ticket i booked from Himeji to Tokyo 4. Do they check ticket before i board the train? or during the journey?
Option B : 1. Book night train ticket from Himeji 23:35 to Tokyo 2. Take the last train from Osaka to Himeji to catch the nighttrain before 23.35PM

Approach B seems safer, because you are physically boarding the limited express train before midnight. If you use approach A and the conductor realizes that you did not board the train until after midnight, it could theoretically lead to complications - although unlikely.

Option B sounds good.
Option A is against the rules. (You plan not to use the seat for the section from Himeji to Osaka; therefore, reserving the seat from Himeji Station means that you deceive JR-West company and try to avoid paying the limited express surcharge which you should pay.)

If you cannot book a Sunrise Seto - Izumo Nobi-nobi seat, as long as you hope to go all the way to Tokyo with your 7-day Japan Rail Pass, you have to leave Osaka earlier, get to Shin-Osaka Station and catch a Shinkansen Hikari train.
According to the current timetable, the second last Hikari departure from Shin-Osaka for Tokyo is scheduled at 20:21.
Shinkansen trains run not via Osaka Station. Sunrise Seto - Izumo skips Shin-Osaka Station.

Your train time data seem to be incorrect.
According to the current timetable:
[Sunrise Seto - Izumo bound for Tokyo]
Okayama : Sunrise Izumo gets coupled to Sunrise Seto. : Departing at 22:34
Himeji : Arriving at 23:32 : Departing at 23:33
Osaka : Arriving at 0:31 : Departing at 0:33

Thank you Uji, H and omotenashi! i will go with Option B. Option A will be my worst case scenario (hopefully i don't get to executed this) Can i check if nobi nobi seat can be booked online if we purchase JR Pass directly from https://japanrailpass.net/en/purchase.html . it will be costed higher at 33,610yen instead of the regular 29,650. but if i would to purchase it directly, i would be able to utilize the online booking system and book the nobinobi 1 month ahead of my travel instead of booking it when i am japan (which might result in soldout). then i can plan my trip better. Yes, my train timing data might be a little inaccurate, i seem to be getting different timing from difference website. is there an official timing or timetable from JR that i can reference from? Please share with me :)
