Is sugar used a lot in japanese food? I'm going to Japan next year and my husband is type 1 diabetic so can't eat food containing sugar. Do lots of noodle dishes/ broths etc. contain sugar?

I'm not sure if a type 1 diabetic can eat carbo as in noodles and rice? There is no sugar in the noodles or steam rice and no sugar in the broth but has salt content. Broth is generally made with fish or kombu base and is healthy but sometimes like eveything else, a little sugar may be added for combined flavor on certain dish. Japanese don't use a whole lot of sugar except maybe on their Japanese sweet cakes such as manju.
There is a little sugar in for instance, sukiyaki sauce but only a tablespoonful or so.
However carbohydrate is high up on Japanese foods as you can see because of noodles and rice dish.

Not sure if Mirin has any sugars in it? Its kind of sweet to an extent.

Mirin has corn syrup and alcohol.
Where as Rice Vinegar has no sugar or salt.
