Well here's the thing.
1) I like you = suki desu. That's if its understood that you are the one that likes, otherwise you have to say: Watashi wa suki desu. But this really means I love you. Japanese I love you aishteru, but most never say this in all their lives because it is expressed in their actions. So they say suki desu when they are dating and want to become serious or exclusive. Be very careful using it.
As for I want to take care of you it REALLY depends on the context. Is this person someone that needs assistance or is it someone that you want to express that type of love for?
