how would you say something like "I wish I could do as much for you as you have for me" or "I wish I could help you as much as you help me", as an expression of gratitude? I'm a bit stuck. Thanks!

You can say it in plain English; "You have done so much for me. I wish I could do a lot for you in the future."
Or you can use the common expression; "Honto ni o-sewa ni natte imasu. Watashi de o-yaku ni tateru koto ga areba, nandemo itte kudasai ne." (literally meaning, "You have been doing so much for me. If there is anything at all that I can do for you, please let me know.")
