Is two hours and twenty minutes between my trains to and from matsumoto station enough time to walk up and visit the castle? I want to be able to enjoy the castle and not feel too rushed, is it possible to see everything and walk to and from the station in this time?

It takes about 15 minutes to walk to the castle one way (or take a bus). Seeing just the castle itself can be done at a leisurely pace in about one hour. Therefore, I think that 140 minutes should be enough time.
I myself did in once in a 1-hour stop over, but it was not enjoyable.
