So on my two week Japan trip i had looked everywhere for a Yuki Ichigo. I only saw it once, and bought it right away. It was so delicious! I'm interested in attempting to make it myself, but a search from Google is failing me. Anyone know where a recipe can be located?

I don't think you can find a detailed recipe anywhere.
It's not a traditional sweets, only a product of a company,
and it sounds like you are asking,
"where can I find the recipe of M&Ms" or Snickers, or anything like that.

However, the constituents doesn't look so special.
The inner part looks like being made up from pound cake and whipped cream and strawberry.
The outer part would be (Gyuhi) a Japanese traditional form of sweets.

You would need mochi-gome, or special type of rice for sticky rice cakes (mochi),
and I don't know if you can get such kind of rice abroad.
