The Seimei no mori Nihon Aerobic Center in Chiba would probably suit you perfectly- they have accommodation and buffet meals, large indoor spaces and extensive grounds- I went there on a yoga retreat a few years back. The link is only in Japanese I'm afraid: http://www.seimei-no-mori.com/

Assuming you're all foreigners, you'll have to hire an escort as a liaison between the resort staff and your group. Unless you go to an international hotel such as the Hilton. Or how about the Karuizawa Prince Hotel? They should have a few English speaking staff.
