Types of Ramen with no pork

Can I find out if there are types of ramen with no meat or meat stock in the soup? Just seafood or plain vegetarian?

If you could list them, I'll be so grateful!

Virtually all types of ramen have pork or chicken in them, and it would be almost impossible to verify that something is vegetarian or only seafood unless you get it somewhere that explicitly states the ingredients on the menu (like at a vegetarian restaurant).

There are various types, including Tonkotsu (pork bone) soup, Shoyu (soy sauce), miso, shio (salt). However, the last three are often brewed with chicken or fish to make the stock.

Tonkotsu ramen soup is easily recognised because it looks thick and creamy. I'd say that to avoid pork, you could stick to shoyu or shio ramen.

Both shoyu and shio ramen may contain pork stock (it's extremely common with shoyu ramen, but can be present in shio ramen too) and both are often finished with a dash of pork fat. Definitely verify the recipe with the cook, otherwise I'd assume that all ramen contains pork.

There is no "type" of ramen that uses no pork - there are just a few vegan/vegetarian ramen shops, such as this one, right in Tokyo station:

There are a handful of places. Best to research in advance though.

I tried Shrimp Ramen of "Ichigen" while I was in Chitose airport last year.

It says:
"Ebisoba", shrimp ramen uses the soup made of small shrimp from Hokkaido.

and if you try to ask at most ramen shops (or any other kind of restaurant) about vegetarian meals you will generally get blank stare and total confusion on the server's part.. They will be thinking "WHY would ANYONE want THAT???".

Well there's no guarantee that because someone somewhere else calls their product "ebi-ramen" that means it won't have meat in the stock. Your best bet, assuming you feel you need to eat ramen with no meat, is to find specific shops that people say are vegetarian or only fish-based, then go to them.

(Probably no one who actually works in a ramen will be able to help you once you're there - your questions just won't make sense. And anyway it's not like they can just whip up a new batch of stock for you with no meat in it.)

But wanting to eat ramen with no meat is like wanting to eat sushi with no fish. Why don't you just eat something else instead? Soba noodles. Udon noodles. Spaghetti.

You've already asked, and gotten an answer. Some ramen shops do serve seafood ramen with no pork, but it's not a "type" you can ask for - you have to know which shops to go to. If you tell us where you're going, maybe someone can recommend a shop.

Otherwise, what is your plan? Going to different ramen shops and asking them if they use pork or meat in their stock? Good luck with that - they won't understand you, and they probably won't understand that pork bones count as meat.

what Umami Dearest tries to explain you is that they(restaurants) design ebi-ramen to enjoy flavor and taste of shrimp in ramen dish for all guests. it does not mean that they don't use pork or other meats to serve it for vegetarians.
there should be some restaurants for vegetarians, but so many.

I think it would be impossible to get an exact of where I will be at an exact date and exact time. It's more like planning to see Ginza or Asakusa today etc. and hence if I happen to stop and see a ramen shop, I'll ask....any seafood ramen with no pork. Maybe ebiramen..... Yes and specifically will ask about the broth. That's it. Not rocket science here.

Unlike the States, where you can ask to add or withdraw ingredients from a dish to better suit your palate, places in Japan are far less accepting of "altering" their recipes in any way just to accommodate one person. Their house broth may contain meat products even though they only offer vegetarian ingredients and they'll still consider it meatless. It just that pork seems to be a mainstay in the Japanese cuisine when it comes to ramen and you'll be hard-pressed to find something without pork in it.

Perhaps Gurunavi or another website may be able to guide you or some social media website may have groups that cater to your culinary restrictions that can offer assistance.

The language barrier will be a problem because you may not be able to communicate your needs clearly enough for the shop owner to understand. The locals who have the same dietary needs as yourself have the advantage of knowing where to go, so that's why I'd recommend any English-speaking organization or social group in Japan that caters to your tastes. If it's that hard to find, either it's not that common or worth the effort to seek out. Trying another culinary plate may be the better option.

I hope one day people might expand their minds to include ramen without pork. After all if Japan, can somehow discover they can do halal wagyu-- there is still hope.

You will only find "meatless ramen" at somewhere that is a specialist vegan / vegetarian place.

As others have said the stock is made well before you order your soup. Sure they can pull out the charshu but it's simply not possible to pull out the meat from a meat bone dashi.

The reason people like ramen is that it's a tasty pork-based noodle dish. There are hundreds and hundreds of Japanese dishes that don't contain pork - perhaps you can expand your mind to try some of them.
