@ David Already answered about "plain(not flesh)" but store staff cannot understand this word as Ramen products usual. Say "生ラーメン/nama-ramen type" best in Japanese. (In "egg" case 生卵/nama-tamago means "raw egg") 生 means just "no heating" process water content left enough.
