Already answered about "plain(not flesh)"
but store staff cannot understand this word as Ramen products usual.
Say "生ラーメン/nama-ramen type" best in Japanese.
Or find this letter "生(kanji)" or "なま(hiragana)" by yourself.

This 生/nama is "plain" against "乾麺/kan-men(dried noodle)".
(In "egg" case 生卵/nama-tamago means "raw egg")
生 means just "no heating" process water content left enough.

However,regular 乾麺 type can make to 生 type texture easily by regular baking soda/重曹(jyuusou).
